When you are in Naga City, your trip will not be complete without trying Kinalas. One of the things that Naga City known for is its Kinalas. Kinalas is like Naga’s own version of their mami. 

Kinalas is a dish that showcases the rich culinary heritage of the Bicol region in the Philippines, especially in Naga City where it originated. 

Kinalas, derived from the Bicolano word “kalas,” which means “to remove,” refers to the tender meat that falls off the bone in this savory noodle soup. One of the distinguishing features of Kinalas is the addition of a rich, thick sauce made from the brain or marrow of the animal used for the broth. This sauce, called “sarsa,” adds a unique depth and creaminess to the dish, setting it apart from other noodle soups. It is typically garnished with fresh ingredients that add brightness and texture to the dish. Chopped green onions, a squeeze of calamansi, and sometimes a sprinkle of chicharon (crispy pork cracklings) are popular toppings. Additionally, chili peppers or a side of chili oil is provided for those who enjoy a spicy kick.

Kinalas is more than just a dish; it is a culinary tradition that brings people together in Naga City. It is commonly enjoyed at local eateries and food stalls, known as “kinalasan,” where it is prepared and served with care. These establishments are often bustling with locals and tourists alike, all eager to experience the comforting and hearty flavors of Kinalas.

We don’t know much about the history of Kinalas as to when it really started as there isn’t much recorded accounts about it but we can trace back its roots probably during colonial times. There was an entry in the Vocabulario de la Lengua Bicol by Marcos de Lisboa which was published in 1628 that describes kinalas or hinglas as “separating the meat from bones, or the bone from the meat”. This could be a clear indication that Bicolanos could have been preparing the same dish for more than 400 years ago. 

Although according to some accounts, Kinalas was first seen in Dayangdang Street where an old man used to sell them. It was said that it dated way back earlier than the 80s or even 70s. Although the identity of the man who first sold them remains unknown, his recipe and dish became popular in the city and Dayangdang Street became the center of Kinalas in Naga City as more local eateries continued to serve this dish.

CORDOVA’S KINALASAN- TSA KAMOT
Location: Corregidor St. Dayangdang, Naga City

Tsa Kamot is known to be the most famous kinalasan in Naga City. Perhaps because she is known as someone who serves it using her hands. She is known for holding the bowl on one hand and her other hand holding the noodles and then putting it in a bowl along with the other toppings and garnishes. Despite this, Tsa Kamot gained popularity for her being one of the pioneers who really popularized Kinalas in Dayangdang and being visited both by tourists and locals to try her Kinalas.

MANG KOK’S KINALAS
Location: #2 Solid St. Dayangdang, Naga City (Boundary of Carangcang, Magarao)

Mang Kok’s Kinalas is also one of the famous Kinalasan at Dayangdang. It is actually has a homey ambaince because of its architecture inspired by the old bahay na bato with capiz windows and murals of Naga City’s famous landmarks and its special Kinalas. Mang Kok’s also gained approval of its regulars and tourists visiting to try their kinalas and gained its title as the “Best Kinalas in Naga City”.

DIDICK’S KINALOG
Location: KM10 Carolin, Naga City

Didick’s Kinalog offers more than just Kinalas. It is actually a chill place where you can enjoy your Kinalas far away from the bustling city of Naga. It has a fresh air and relaxing ambiance where you can enjoy the view of nature while savoring your Kinalas and best paired with some Turon and softdrinks. Didick’s Kinalog also serves log-log aside from Kinalas. Those are their specialties. Apart from that they also serve lutong bahay just like other eateries. Didick’s Kinalog became a pitstop for local cyclists on their way back to downtown Naga after a round of cycling uptown, for tourists who just probably had a roadtrip somewhere uptown or at Panicauason, and for random folks who wanted a steaming bowl of Kinalas for either snack on a rainy afternoon or cold night.

Kitchen Everywhere first started in Dayangdang too. However, when pandemic came, they had to close it and then eventually moved to Del Rosario with a bigger space. Ktchen Everywhere is actually quite popular too. Maybe because it is not like other Kinalasan with a kubo-eatery vibe. Kitchen Everwhere has a neat chill place that is airconditioned and considered more classy. It offers an upgraded Kinalas experience. Kitchen Everywhere’s innovations in its menu is really what makes it stand out and makes it even more popular these days. They are offering not just the traditional overload Kinalas but also Kinalas Pizza, Kinalas Wrap and Baked Kinalas. These are all part of their Kinalas Series in which they are offering different variety of Kinalas in different food. Who would have thought that it would be possible right?
